SIFAT MUTU TEPUNG SINGKONG YANG DIMODIFIKASI DENGAN ACETOBACTER XYLINUM DAN KEFIR AIR

Abstract
Mocaf (Modfied cassava flour) adalah tepung singkong yang dihasilkan melalui proses fermentasi. Pada penelitian ini fermentasi dilakukan menggunakan Acetobacter xylinum dan kefir air. Tepung singkong tanpa fermentasi dibuat sebagai control. Sifat kimia dan fisika tepung dibandingkan. Sifat kimia meliputi kadar air, abu, serat kasar, HCN, pati dan total asam. Sifat fisika meliputi derajat putih, profil gelatinisasi, dan volume spesifik roti kukus. Fermentasi tidak berpengaruh (p>0.05) terhadap semua sifat kimia, derajat putih, suhu gelatinisasi, dan waktu untuk gelatinisasi, tetapi berpengaruh (p<0.05) terhadap profil viskositas, dan volume spesifik. Fermentasi meningkatkan profil viskositas dan volume spesifik roti kukus. Fermentasi dengan Acetobacter xylinum and kefir air menghasilkan Mocaf dengan sifat fisikokimia mirip kecuali volume spesifik roti kukus, yaitu lebih tinggi untuk Mocaf yang dibuat dengan Acetobacter xylinum
