PENGGUNAAN BAHAN PENSTABIL PADA MUTU VELVA ROSELA (Hibiscus sabdariffa L.) DENGAN PEMANIS MADU

Abstract
Bunga rosela memiliki kandungan penting yang terdapat pada bunga rosela yaitu pigmen antosianin. Penelitian ini bertujuan untuk mendapatkan formula velva. Serta Mengetahui tahapan pembuatan dengan ditambahkan madu dan penstabil. Penelitian pendahuluan ini dibuat tiga konsentrasi pemanis madu. Hasil memperlihatkan bahwa velva rosela terpilih berdasarkan distribusi frekuensi adalah konsentrasi pemanis madu 35%. Velva rosela terpilih mempunyai nilai yang lebih besar pada distribusi frekuensi dan lebih ekonomis harganya. Penelitian utama ini dibuat empat konsentrasi bahan penstabil. Penelitian Utama velva rosela terpilih berdasarkan parameter butiran kristal adalah penstabil menggunakan gum arab 3% sebesar 4.05%. Velva rosela terpilih berdasarkan parameter overrun adalah penstabil CMC 3% sebesar 5.59%. Velva rosela terpilih berdasarkan parameter persen leleh adalah penstabil menggunakan gum arab 3% sebesar 28.18%. Analisis sifat fisik menunjukkan bahwa velva rosela memiliki aktifitas antioksidan 52.191 ppm.
