PREFERENCE MAPPING MINUMAN SERBUK RASA JERUK PERAS DENGAN VARIASI SUHU PENYAJIAN MENGGUNAKAN SOFTWARE SENSOMAKER

Abstract
Minuman serbuk mempunyai keuntungan ekonomi yang lebih dibandingkan dengan produk ready to drink, diantaranya biaya produksi dan pendistribusian yang relatif lebih rendah, serta umur simpan yang lebih lama daripada produk ready to drink. Beberapa brand produk minuman jeruk serbuk yang sudah dikenal masyarakat Indonesia terbilang cukup intens berinovasi untuk menghasilkan produk minuman jeruk dengan varian rasa baru. Disamping itu, terdapat kebiasaan konsumen untuk menyajikan minuman serbuk rasa jeruk dengan suhu yang berbeda, yaitu hangat, suhu kamar, dan dingin. Untuk melihat seberapa besar pengaruh suhu penyajian terhadap penerimaan konsumen, penting dilakukan analisis sensori produk melalui Preference Mapping dengan menggunakan software sensori, salah satunya adalah Sensomaker. Berdasarkan hasil Qualitative Descriptive Analysis (QDA), profil minuman serbuk rasa jeruk dipengaruhi oleh suhu penyajian. Hasil Preference Mapping untuk internal mapping, suhu penyajian mempengaruhi preferensi konsumen, untuk external mapping didapatkan bahwa profil yang lebih dominan disukai panelis pada produk minuman serbuk rasa jeruk adalah profil manis, peely, dan citrus.
