KAJIAN STABILITAS KOMPONEN VOLATIL SIRUP CAMPURAN JAHE, SEREH, DAN MADU SELAMA PENYIMPANAN

Abstract
Jahe (Zingiber officinale) dan sereh (Cymbopogon citratus) merupakan dua dari jenis rempahrempah yang sering digunakan sebagai bahan baku pembuatan minuman dan makanan. Madu juga merupakan bahan yang telah diketahui memiliki sifat fungsional. Berbagai bentuk minuman fungsional telah dibuat, salah satunya sirup. Penelitian ini bertujuan untuk menentukan formula terbaik dari sirup berbahan dasar jahe, sereh, dan madu; dan mempelajari profil komponen volatil sirup selama penyimpanan pada suhu ruang. Formula terbaik sirup terdiri atas ekstrak jahe 25%, ekstrak sereh 15%, dan madu 10% . Komponen volatil utama pada sirup antara lain citral, neral, zingiberene, curcumene, beta-bisabolene, dan cineol (1.8). Penyimpanan selama 8 minggu pada suhu ruang menyebabkan terjadinya penurunan luas area pada citral, neral, curcumene, dan beta bisabolene. Hal berbeda ditunjukkan pada cineole (1.8) dan zingiberne yang mengalami peningkatan luas area selama penyimpanan.
